A CULTURA GASTRONÔMICA DO CAFÉ E A SUA INFLUÊNCIA SOCIAL E EMOCIONAL NO DIA-A-DIA DO BRASILEIRO

Abstract

RESUMO

Considerando a história do café, tanto no Brasil como no mundo, percebemos que o mesmo tornou-se um alimento culturalmente gastronômico com um forte vínculo emocional e social, sendo consumido diariamente pelas pessoas em diversos lugares e ocasiões. De acordo com Ornellas (1978) apud Jorge (1), a palavra gastronomia deriva do grego "gastros" (estômago) e "nomas" (leis). Savarin (2) acrescenta que a gastronomia é o conhecimento fundamentado do que se refere ao homem, na medida em que se alimenta, sendo o seu intuito de manter o bem estar do homem por meio da alimentação. O objetivo deste trabalho foi mensurar, através de uma pesquisa qualitativa, a percepção atual das profissionais que preparam diariamente "cafezinho" nas instituições pertencentes e/ou com um vínculo no setor público da cidade de Moreira Sales - Paraná sobre a influência que essa bebida possui nas relações sociais e no trabalho diário.

ABSTRACT

Considering the history of the coffee in Brazil and in the world, we noticed that the coffee became a food culturally gastronomical with a fort emotional and social bond being consumed it daily any hour for the people in several places and occasions. In agreement with Jorge (2005) apud Ornellas (1) the word gastronomy, flows of the Greek "gastros" and (stomach) "nomas" (laws) and Savarin (2), increases that the gastronomy is the knowledge based than refers to the man, in the measure in that he feeds, being his intention to take care for the men's conservation through the best possible feeding. The objective of this work was to measure, through a qualitative research, the professionals' current perception that they make coffee daily in the belonging entities and/or with a bond in the public section of Moreira Sales' city - Paraná on the influence that the coffee haves in the social relationships and in the daily work.
